Although it isn't the time of year we indulge in soup in the Southern Hemisphere, it certainly is appropriate for the Northern Hemisphere and Thanksgiving in the USA. That being said, I thought it was a great time to show you my huge pot of homemade pumpkin soup. There is nothing better than homemade.
I love making this easy mouthwatering dessert on special occasions. It is easy to make and can be prepared well in advance. You do need space in your fridge though.
Have you ever had a veggie burger? A friend introduced me to these a few years back and I think they are better than regular burgers. I make a big batch of them and put them in the freezer so they make a real easy meal. You can slap them between burger buns, rolls or bread. Any way they taste great.
I've been trying to eat healthy, well I usually do but probably not as healthy as I should. I've decided I really should eat more fruit and vegetables. Today I want to share with you one of my favorite veggies, stuffed eggplant. I added a little salad on the side.
Breakfast meetings are fine when you don't have to cook. It leaves you time to focus on the meeting rather than the cooking. Not that I mind cooking, but it always tastes better when someone else does it.
I've had a lapse in blog posts these past weeks due to a virus of some kind. It is nasty with a terrible tickle in the back of your throat causing you to cough a lot and one day you will feel like you are getting better, but the next day it hits you again. I hope to say, touch wood, that I am now over the worst of it and getting back on track.
Today I tried a new recipe that a friend gave me. I never really thought of grilling fruit with chicken but hey, I'll try anything once. Well, I loved it so much that I want to eat it again for dinner tomorrow.
If you are a follower of my daughter's blog you will know that I am staying with her for a few weeks. Last week, she hinted to me, not once but three times, there were blueberries in the fridge that should be used before they go bad. "Mum you should make blueberry pancakes for breakfast." Sounds good, but getting around to doing it is another story.
