I'm a great fan of omeletes. Almost any kind of omelete works for me. I have an omelete every week at least once sometimes twice. My favorite are hot omeletes with chipotle peppers. This morning I made an all veggie omelete which is just as good as one with meat.

What can you see? Nopales. I often add this in my omelete. Nopales is often referred to Prickly Pear Cactus and I just learned that it is high in antioxidants and has cholesterol-reducing properties. Bonus! Apparently it is also beneficial for diabetics because it reduces blood glucose levels too.
Also in my veggie omelete you'll find potato, onion, tomato, bell peppers and any leftover veggies I happened to have, all mixed in with a chipotle pepper or two. Of course, I cannot forget to top it with lots of cheese. Yum yum.
